Chickpea Salad Sandwich

1 15oz can of chickpeas
2 tbsp tahini
1 tbsp dijon mustard
1 tbsp maple syrup
1 stalk of celery, finely chopped
1/4 cup diced green onion
pinch of salt and pepper to taste
2 slices of your favorite bread
your sandwich toppings of choice (lettuce, tomato, onion, etc.)
Directions
- Drain and rinse can of chickpeas. Put them in a large mixing bowl. Use a potato masher or fork to mash the chickpeas. Leave some chickpeas whole for texture.
- In a separate bowl, mix together the tahini, mustard, maple syrup, salt and pepper. Add this dressing to the mashed chickpeas.
- Stir in the chopped celery and green onion.
- Spread ½ cup of the chickpea salad on a slice of bread. Add whichever toppings you’d like such as lettuce, tomato, or red onion.
